Vegetable Nuggets Recipe 

Ingredients:

  • Carrot cubes 1 cup
  • Corn kernels boiled 1/2 cup 
  • Capsicum 1/2 cup 
  • Peas 1 cup 
  • Cooking oil tablespoon 
  • Potatoes boiled 4 medium 
  • Garlic powder 1tablespoon 
  • Salt 1 tablespoon or to taste 
  • Onion powder 1/2 tablespoon 
  • White pepper powder 1/2tablespoon 
  • Red chili crushed 1/2 tablespoon 
  • Black  pepper powder 1/2 tablespoon 
  • Mixed herbs 1 tablespoon 
  • All purpose flour 1/2 cup 
  • Water 1 cup
  • Breadcrumbs 1 cup or as required 
  • Cooking oil for frying 
  • Non stick spray 
Instructions:

  1. In a chopper carrot corn kernels capsicum peas chop coarsely & set aside 
  2. In a frying pan add cooking oil chopped vegetable & cook on medium flam for 2-3 minutes
  3. Let it cool 
  4. In a bowl add potatoes & mash well with the help of masher 
  5. Add sauteed vegetables garlic powder salt onion powder white pepper powder red chili crushed black pepper powder mixed herbs  & mix until well combined
  6. Spread cling film on a working surface place a square mold or tray to set the mixture add prepared mixture (100g) & set evenly 
  7. Remove mold & cut into four pieces (1.5-inch size)
  8. In a bowl add all - purpose flour water  & mix well 
  9. Now dip vegetable nuggets in  flour slurry & coat with breadcrumbs then again dip in flour slurry & coat with breadcrumbs (makes 28-10)
  10. Can be stored in an airtight container f0r up to 2 weeks in freezer 
Option # 1: Deep Fry:

  • In a wok heat cooking oil & fry on medium flame until golden.
Option # 2: Air Fry:

  • Spray non- stick spray & air fry in preheated air fryer at 180c for 15-18 minutes 
  • Serve with tomato ketchup
