Vegetable Pancakes Recipe
Ingredients:
Prepare Vegetable Pancakes:
- Zucchini julienne 1 cup
- Onion sliced 1/2 cup
- Potato julienne 1 cup
- Carrot julienne 1/2 cup
- Mushrooms sliced 1/4 cup
- Spring onion chopped 1/2 cup
- Garlic powder 1/2 tablespoon
- Salt 1/2 tablespoon or to tastear
- Black pepper powder 1/2 tablespoon
- All - purpose flour 1/2 cup
- Cornflour 1/4 cup
- Water 3/4 cup or as required
- Cooking oil 1 tablespoon
- Tomato ketchup 1/4 cup
- Lemon juice 1 tablespoon
- Garlic powder 1/2 tablespoon
- Brown sugar powder 1/2 tablespoon
- Salt1/4 tablespoon
- Black pepper powder 1/4 tablespoon or to taste
- Paprika powder 1/2 tablespoon
- Fresh coriander chopped
Prepare Vegetable Pancakes:
- In a bow add zucchini onion potato carrot mushrooms spring onion garlic powder salt black pepper powder all- purpose flour cornflour & gradually add water mix well & set aside
- Grease frying pan with cooking oil add pancake batter spread evenly && cook for 3-4 minutes until light golden & cook other side for 4-5 minutes until golden & crispy (makes 3-4)
- In a bowl add tomato ketchup lemon juice garlic powder brown sugar salt black pepper powder paprika powder & whisk well
- Garnish with fresh coriander & serve with BBQ sauce
