Chicken  BBQ Rice Platter Recipe 

Ingredients:

  • Yogurt (1/2 cup)
  • Salt (to taste) 
  • Black pepper (1/2 tablespoon) 
  • Cumin powder (1/2 tablespoon)
  • Paprika (1 tablespoon )
  • Chili flakes (1/2 tablespoon)
  • Onion powder (1 tablespoon)
  • Lemon juice (1  1/2tablespoon)
  • Garam Masala  (1/2 tablespoon)
  • Orange food color (1/4 tablespoon)
  • Turmeric powder (1/2 tablespoon)
  • Boneless chicken cubes ( 700 g )
  • Oil (1tablespoon)
  • Oil (2 tablespoon)
  • Marinated chicken 
  • Aluminum foil
  •  Coal  (1)
  • Eggs (4) 
  • Salt (to taste) 
  •  Black pepper crushed (1/2 tablespoon) 
  • Orange food color (1/2 tablespoon) 
  • Oil (1 1/2tablespoon)
  • Mayonnaise (1 cup) 
  • Sweet chili sauce (2 tablespoon)
  • Hot sauce (1tablespoon)
  • Ketchup (1 tablespoon)
  • Salt (to taste)
  • Black pepper powder (1/2 tablespoon)
  • Lemon juice  (2 tablespoon)
  • Soy sauce (1tablespoon)
Instructions:

  1. In a bowl add  mayonnaise  sweet  chili sauce hot sauce ketchup salt black pepper and lemon  juice whisk until well combined and set aside
  2. In another bowl  add yogurt salt black pepper cumin powder paprika chili flakes ginger garlic paste onion powder lemon juice garam masala orange food color turmeric powder  oil and  boneless cubes mix until chicken  is well coated let it marinate for at least 30 mins
  3.  Heat some oil in a pan and add your marinated chicken cook it until the gravy dries out smoke it for 2-3 minutes with burning coal your BBQ chicken is ready
  4. Ina a small bowl add eggs salt black pepper food color and oil whisk it well 
  5. Now heat oil in a pan add egg mixture and scramble your  egg mixture until fully cooked on medium low flame
  6. Now in a bowl add rice and water soak them as per instructions on the pack 
  7. Bring water to boil in pot add  salt oil and vinegar add rice and let cook until 80% done stain and set aside
  8. Now heat some oil in a pot add garlic and saute them add carrot and capsicum and saute for about 2 minutes on high medium flame now add salt black pepper vinegar soy sauce and cook for another 2 minutes 
  9. Add  boiled rice and give it a good mix  lastly add scrambled eggs add green onion give good  and gentle mix again
  10. Now heat some oil in a pan saute garlic for 2 minutes add  all the vegetables and saute for 2-3 minutes new add salt black pepper lemon juice and soy sauce cook again for 1 minute and take off the flame 
  11. In  a tray lay a bed of egg fried rice top them with  sauteed vegetable chicken and lastly drizzle some garnish with green onions your BBQ rice platter is ready to serve
