Masala Chicken Rice Platter Recipe
Ingredients:
ingredients for Chicken Preparation:
- Boneless chicken (thing cubes) 700 g
- Yogurt 2 tablespoon
- Cream 3 tablespoon
- Lemon juice 1 1/2 tablespoon
- Salt 1/2 tablespoon / to taste
- Red chili powder 1 tablespoon
- Ginger garlic paste tablespoon
- Black pepper powder 1/2 tablespoon
- Turmeric powder 1 tablespoon
- Garam masala powder 1 tablespoon
- Orange food color 1/2 tablespoon
- Oil 2 tablespoon
- Oil (for cooking) 2 tablespoon
- Fried onion 1 cup
- Cashew nuts 1/4 cup
- Almond 1/4 cup
- Water as required
- Oil 1/4 cup
- Ginger garlic paste 1/2 tablespoon
- Fried onion past 1/4 cup
- Tomato paste 2 tablespoon
- Salt 1/2 tsp / to taste
- Black pepper powder 1 tablespoon
- Garam masala powder 1/2 tablespoon
- Cashew nuts 1/4 cup
- water if required
- Yogurt 1/2 cup
- Cream 1/4 cup
- Red chili powder 1/2 tablespoon
- Almonds 1/4 cup
- Butter 2 tablespoon
- Veggies as required
Ingredients for Boiling Rice:
- Water (for soaking) as required
- Water as required
- Guard basmati rice 2 cups
- Vinegar 1 1/2 tablespoon
- Oil 2 tablespoon
- Salt 1 tablespoon
- Oil 2 tablespoon
- Garlic (chopped ) 1tablespoon
- Carrots (chopped) 1/4 cup
- Capsicum (chopped ) 1/4 cup
- Cabbage (chopped ) 1/4 cup
- Black pepper powder 1tablespoon
- Salt 1/2 tablespoon/ to taste
- Boiled rice
- Green onion ( chopped )as required
- In a bowl add chicken , yogurt , cream, lemon juice, salt, red chili powder, ginger garlic paste, black pepper powder, turmeric powder, garam masala power, orange food color, oil and mix well. marinate for 30 minutes to 4 hours
- In a pan heat oil and add marinated chicken. cook until chicken gets dry and full tender.
- In a blender add fried onion, cashew nuts, almonds, water and blend into smooth paste. your onion and nut paste is ready.
- Now in anther pot, heat oil, add ginger garlic paste cook for 1- 2 minutes. add onion and nut paste and cook for 2- 3 minutes
- Add tomato paste and cook if needed. now add salt , black pepper, garam masala powder and cook for another 2-3 minutes .
- Now add yogurt and cook for 4-5 minutes on medium low flame. add cook until desired consistency has reached. take off flame and your gravy is ready . set aside
- In a bowl add guard basmati rice and soak for 25- 30 minutes.
- In a pot heat water and bring it to boil . add salt, oil, vinegar, soaked rice and cook until 80% done. strain and set aside.
- Ina pot heat oil and add garlic. saute for 1 minute. now add carrot, capsicum, cabbage, and cook for 1-2 minutes on high flame. add salt, black pepper and mix well.
- Add boiled rice and green onion, give it a good mix on high flame for 1-2 minutes,. your friend rice is ready.
- Serve with cooked chicken, masala gravy and sauteed veggies.
