 Dhaga Bun Kabab Recipe

Ingredients:

Prepare Bun Kabab Chutney:

  • Mint leaves half bunch
  • Fresh coriander half  bunch 
  • Green chili 5-6
  • Garlic cloves 4-5
  • Ginger 1  inch piece
  • Cumin seeds roasted & crushed 1/2 tablespoon
  • Black salt 1/4 tablespoon
  • Coriander seeds roasted & crushed 1 tablespoon
  • Salt 1/4 tablespoon or to taste 
  • Tamarind pulp 1/2 cup 80g tamarind soaked in 1/2 cup water 
  • Vinegar 1 tablespoon 
  • Water 1/4 cup
  • Red chili crushed 1/2 tablespoon
Prepare Dhaga Kabab:

  • Poppy seeds 3tablespoon (washed & dried)
  • Water 3 tablespoon
  • Green chilies 5-6 
  • Onion fried 1 cup 
  • Mint leaves handful 
  • Boneless beef 500g 
  • Charbi  50g 
  • Raw papaya paste 4 tablespoon 
  • Ginger garlic paste 2t tablespoon 
  • Gram flour roasted 3 tablespoon 
  • Red chili powder 2 tablespoon or to taste
  • Garam masala powder 1 tablespoon
  • Black pepper powder 1/2 tablespoon 
  • Mace powder 1/4 tablespoon 
  • Nutmeg powder 1/4 tablespoon 
  • Cumin powder 1/2 tablespoon 
  • Black salt 1/2 tablespoon 
  • Salt 1 tablespoon or to taste
  • Kewra water 1 tablespoon 
  • Charcoal for smoke 
  • Clarified butter  1-2 tablespoon 
  • Clarified butter 1 tablespoon 
  • Clarified butter 1/2 tablespoon 
  • Bun kabab  buns
  • Onion rings 
  • Fresh coriander chopped
  •  Clarified butter
Instructions:

Prepare Bun Kabab Chutney:

  1. In a blender jug add mint leaves fresh coriander garlic ginger cumin seeds black salt coriander seeds salt  tamarind pulp vinegar water & blend well
  2. Add red chili crushed mix well & set aside 
Prepare Dhaga Kabab:

  1. In spice mill add poppy seeds  water grind well & set aside  water grind well & set aside
  2. In a meat chopper add green chilies fried onion mint leaves & chop well 
  3. Add beef along with beef fat raw papaya paste ginger garlic paste poppy seeds paste gram flour red chili powder garam masala powder black pepper powder mace powder nutmeg powder cumin powder black salt salt  kewra water & chop until well combined 
  4. Take out in a bowl cover & marinate for 4 hours or overnight in refrigerator 
  5. Knead the mixture for 1-2 minutes & give coal smoke for 2-3 minutes 
  6. With the help of wet hand take a mixture (85g) thread on wooden skewer and tie with kitchen twine/ thread 
  7. On heated griddle add clarified butter let it melt and fry kebabs on low flame from all sides until don
  8. Remove thread from kebab add clarified butter and cook for a minute 
  9. On same griddle add clarified butter cut buns form the middle and toast buns 
  10. On bun kabab buns add & spread bun kabab chutney  Dhaga  kebab onion rings & fresh  coriander
  11. Add clarified butter and toast bun kabab form both sides (makes 8-10) 
  12. Serve with bun kabab chutney
